Cookery students take up mystery box challenge

Two dishes in sixty minutes with a mystery box of protein and seasonal vegetables.

The mystery box challenge is in memory of beloved tutor, Catherine Dunkley.

Level 4 Cookery students did her proud with their mystery boxes of lamb and seasonal vegetables including purple cauliflower and carrots. The students also have access to a pantry of other goods to add to their dishes.

Congratulations to Alicia who took out the Catherine Dunkley Award. The judges said the cooking of the protein part of a dish has to be perfect because that is how customers choose a dish. Alicia achieved that with her rump lamb with purple cauliflower puree, pea puree, sautéed shallot and baby carrots in orange juice.
